Grilled Chicken & Cucumber Salsa

  • 1 large cucumber, peeled and chopped
  • 1 cup grape tomatoes, halved
  • 1/2 medium onion, chopped
  • 1 hass avocado, chopped
  • 1 can black beans, drained
  • 2 Tbsp lime juice
  • 1 tsp cumin
  • salt & pepper to taste

Mix everything together in a bowl and put 1 cup (or more) on top of grilled chicken that was rubbed with 1/2 tsp chipotle chili pepper and 1/2 tsp salt.

 

 

This is 6.7 ounces of chicken and 1 cup of the salsa. I had to eat it in two sittings!
